Welcome to the first of a series of blogs that will introduce you to the diverse and splendid team of front and back of house staff who make Chamas such a great place to dine. We are proud of our dedicated and enthusiastic colleagues.

If you detect a spark of love in the air next time you’re visiting the restaurant, it might be down to married Brazilian couple Claudio Maicrovicz and Aneildes Celestino da Silva’s passionate commitment to creating genuine Brazilian cuisine. They are devoted to providing an authentic experience. The very essence of Brazilian dining.

Chamas’ Head Chef Claudio has over thirty years’ experience of the Rodizio, Brazil’s prevalent fixed price, all you can eat dining experience. ‘I grew up in Paraná, Southern Brazil, where most of my childhood was spent participating in social gatherings around the campfires of South American horsemen and cowboys, known as gauchos. These were true family affairs, with an open fire being the centre of the feast.’

‘I’m passionate about sharing my background and culture with the people of Beverley and the East Riding. I strive to ensure that every dish, every skewer, is spit roasted over a traditional churrasco, just as they would be back home in Brazil.’ The Churrasco, marinated meat barbecued over an open fire of wood or charcoal, imbues everything with an extraordinary flavour.

‘My favourite dish is Picanha, a Rump Cap popular in Brazil. It’s the most authentic steak used for the Brazilian churrasco, the very finest meat, a signature cut which has a succulent texture and an exceptional taste.’

Aneildes is also from Southern Brazil and has extensive experience in the restaurant trade. It was their shared passion for Brazilian cuisine that ensured the couple’s paths collided. A match made in culinary heaven.

Aneildes is one of the chef’s responsible for the delicious variety of hot and cold sides on Chamas’ generous and unlimited buffet bar. ‘My favourite dish is the Feijoada; a stew of beans with beef and pork that originated from Portugal. The name comes from feijão, Portuguese for beans.’ What does she love most about being part of the Chamas team?

‘Chamas has such a brilliant atmosphere and lively energy. It evokes the spirit and vibe of Brazil. Delicious food, authentic and so lovingly prepared that I never feel far from home.’
